Alice Springs Chicken

Ingredients
- 4 skinless, boneless chicken breast halves
- 8 slices bacon
- 4 ounces fresh mushrooms, sliced
- 4 slices Monterey jack or Pepper jack cheese
- 1/4 cup brown or Dijon mustard
- 2 tablespoons honey
Instructions
- Make a honey mustard dressing by combining the mustard and honey.
- Brush dressing all over breasts and broil for about 5 minutes on each side, or until chicken is no longer pink.
- Meanwhile, fry bacon in skillet. Remove bacon, and saute mushrooms in bacon grease until tender.
- Remove chicken from oven. Top each breast with mushrooms, bacon, and then cheese.
- Return to oven and broil until cheese has melted.
