Applesauce

Ingredients
- 5 organic apples (see Notes)
- 1 cup water
- 1 teaspoon lemon juice (optional)
Instructions
- Quarter and core the apples. Do not peel if you are using organic apples. Cut each quarter into 3 or 4 pieces.
- Put apple pieces in a food processor and process until the apples are a chunky sludge (~ 10 seconds).
- Add water a little at a time, processing between additions until the desired consistency is reached.
- Add optional lemon juice and process a little more to mix.
Notes
- I like to use Galas, Spartans, and Red Delicious apples with a Granny Smith or 2 thrown in.
- The lemon juice is to help the applesauce retain its color. It is not necessary.
- The top layer of sauce will darken a little after some time in the refrigerator; this is OK.
- You will never buy applesauce from the store again after you try this. It has a unique taste to it that you can't get from jarred applesauce. Reminds me of Cherry 7-Up.
