Brown Rice

Instructions

  1. Combine rice, enough water to cover rice by at least an inch, and whey and allow to sit in a warm place for at least 7 hours. (I use the oven with the light turned on.)
  2. Drain rice and put in a 2-quart pot. Add 3 cups water and bring rice to a boil. Skim the scum/foam that comes to the top.
  3. Add butter and salt.
  4. Reduce heat to lowest possible setting, cover, and cook for 45 minutes. Do not lift the lid during cooking.
