Brown Rice
(Nourishing Traditions)
Ingredients
- 2 cups brown rice
- water
- 1/4 cup whey, kefir, or lemon juice
- 4 - 8 tablespoons butter
- 1 teaspoon salt
Instructions
- Combine rice, enough water to cover rice by at least an inch, and whey and allow to sit in a warm place for at least 7 hours. (I use the oven with the light turned on.)
- Drain rice and put in a 2-quart pot. Add 3 cups water and bring rice to a boil. Skim the scum/foam that comes to the top.
- Add butter and salt.
- Reduce heat to lowest possible setting, cover, and cook for 45 minutes. Do not lift the lid during cooking.
Notes
- This comes out perfectly for me on my electric stove, but my mother-in-law has a gas stove and has to add more water. Experiment to see how much water you need.
