Chocolate Chip Oatmeal Cookies

Ingredients
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 egg
- 1 teaspoon vanilla
- 3/4 cup whole wheat (hard white) or all-purpose flour
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups rolled oats
- 1/2 cup chopped nuts (walnuts or pecans)
- 1 cup semisweet chocolate chips
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.
- Beat in the egg and stir in the vanilla.
- Combine the flour, baking soda and salt, and stir into the creamed mixture until just blended.
- Stir in the oats, walnuts, and chocolate chips.
- Drop by heaping spoonfuls onto an ungreased cookie sheet.
- Bake for 11-12 minutes in the oven. Allow cookies to cool for 5 minutes before removing from cookie sheet.
Notes
- I know what you're thinking. Whole wheat flour in a cookie? It is GREAT!
- You'll get around 20 cookies with this recipe. They are nice and crispy on the outside, but very chewy on the inside!
