Cornbread

Ingredients
- 1 cup cornmeal
- 1 1/4 cups milk
- 1 1/4 cups whole wheat (hard white) flour (all-purpose would work)
- 1/2 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup white sugar
- 1 egg
- 1/8 cup olive oil
Instructions
- Preheat oven to 400 degrees F (200 degrees C). In a small bowl, combine cornmeal and milk; let stand for 5 minutes.
- In a large bowl, whisk together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs and oil until smooth. Pour batter into greased deep dish pie plate or cast iron skillet.
- Bake in preheated oven for 25-30 minutes (20-25 minutes for cast iron skillet), or until a knife inserted into the center of the cornbread comes out clean.
