Creamed Spinach

Ingredients
- 1-10 oz. package frozen chopped spinach
- 2 tablespoons butter
- 1 1/2 tablespoons arrowroot
- 1/2 cup cream
- 1/4 teaspoon salt
- Dash black pepper
- Dash nutmeg
- Dash red cayenne pepper
Instructions
- Cook the spinach following the directions on the package. Drain and squeeze all the liquid from the spinach when it's done.
- Melt the butter in a large skillet over medium heat. Add the arrowroot to the melted butter and stir until smooth.
- Add the cream and heat for 2-3 minutes or until the sauce thickens. Stir constantly so that it does not burn.
- Stir the spinach and seasonings into the cream mixture. Cook for 2-4 minutes, stirring constantly.
Notes
- This is pretty zippy. We like it that way, but you might want to go easy on the cayenne pepper if you don't like spicy food.
